Most nights I stuff my face for dinner then 30 minutes later I decide on what dessert I should have. I am definitely a dentist’s dream patient because I will always keep us in business with all my sweet-tooth cravings. My go-to is anything with milk chocolate (I wish I loved dark chocolate but I just don’t) and caramel. However after a few nights of binge eating I start to get creative with my late night snacks. I’ve tried frozen banana “ice cream” (high recommended), fage greek yogurt with honey, peanut butter and chocolate chips (again highly recommended)! And when I’m starting to feel bad about myself but tell myself I’ll start tomorrow I force myself into these “healthy” dessert options by making this chia seed pudding the night before.
- 2 cups coconut milk
- 1/2 cup chia seeds
- 1/2 teaspoon vanilla extract
- 2 TBS splenda
- 2 capsules Blue Majik Milk
- Blend all ingredients except chia seeds in a blender until smooth (including any added flavors, fruits or chocolate). Whisk in chia seeds.
- Pour mixture into a jar or glass container and place in the refrigerator for at least 4 hours or overnight to let gel.
How easy is that?
